New Potatoes with Olive Oil and Herbs




Enough New potatoes for four, give them a wash
50ml EV olive oil
2 tsp chopped chives
2 tbsp chopped flat leaf parsley
Salt & pepper

Boil the potatoes in pan with salted water until tender.

Drain and place in large bowl. Crush lightly with a fork. Pour over the olive oil, it should be enough to lubricate the potatoes, and add the herbs. Give them a gentle stir to mix and coat.

Serve warm.
