New Potatoes with Bacon, Garlic and Rosemary




Enough New potatoes for four (you will know how much they will eat!), give them a wash
100g lardons or pancetta pieces
2 cloves garlic, chopped fine
A couple of sprigs of rosemary, chopped roughly

In a large frying pan over medium-low heat, fry the pancetta pieces with a little olive oil.

Add the potatoes, garlic, rosemary and fry for a couple of minutes.

Add a tbsp of water. A good grind of sea salt, cover the pan and cook gently for about 12-15 minutes. Give the pan a good shake every couple of minutes. Take the lid off and continue to cook for another couple of minutes until the potatoes are tender.
