Another honey based marinade for chicken, I like using this one with frozen meat: the acid in the lemon juice tenderises the meat, so it's worth steeping the chicken in the mixture for a good while.
Ingredients
- 3 lemons, zest and juice
- 5 cloves garlic, crushed
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp pepper
- 1 tsp paprika
- 2 tsp coriander seed, crushed
- 3 tbsp runny honey
Mix it all up and add the chicken.
