Moor's Marinade

Continuing a nasty habit I've gained of naming any recipe that uses dates or date syrup as Moors something or other, this is a steak marinade which combines sweet and sour in a dark, juicy kind of way. Slap it on a sirloin or rub it into yer rump!

Ingredients

  • 100ml date syrup
  • 100ml white wine vinegar
  • 1 tbsp olive oil
  • 1 small tin tomato paste
  • 8 black olives, pitted
  • 1 small red pepper, diced
  • 2 limes, grated zest and juice
  • 2 cloves garlic, chopped roughly

Put the vinegar, the olive oil, the lime juice, the garlic, the pepper and the olives together in a pan, adding the date syrup when the mixture has warmed. Add the tomato paste, and cook for 5 minutes over a medium heat, stirring constantly. Leave to cool for 15 minutes and then blend thoroughly in a blender. Marinate steak overnight or even longer.
