This recipe is a recent invention by my mom rather than a traditional hand-me-down from granny!
Ingredients- 1 can chickpeas
- 1 small onion chopped
- 2 tbs Thai chilli sauce
- 1 cucumber, chopped and quartered
- Chopped coriander for garnishing
Open the can of chickpeas and drain. Heat a non-stick pan or pot and add about tablespoon of oil. When heated, add the chopped onion and cook until slightly caramelized. Add the drained chickpeas and cook for about a minute or two. Add the Thai chilli sauce and stir for a minute more so that the chickpeas are coated. Turn the heat off and add the cucumbers and coriander. Stir and serve.
