Kachcha Channa


This takes a bit more time. For those unfamiliar with Hindi, Kachcha Channa basically means “raw chickpeas”. The time goes in soaking the dry white chickpeas, but assembling takes not more than a few minutes:

Ingredients

  • 1 cup dry white chickpeas
  • 1 ginger pod, cut into super thin cross-section slices
  • 1 tsp chaat masala
  • 1 lemon
  • Chopped coriander for garnishing
Soak the chickpeas in plenty of water and leave overnight, or at the very least for about 6-8 hours. To test if they're soft enough, bite into one. If it sends you to the dentist, leave it for a while longer. When soft enough, wash and drain. Combine the chickpeas with the ginger and chaat masala. Cut the lemon and squeeze on to the mixture and combine. Throw in the coriander leaves and serve.
