1 tbsp runny honey
1 lemon, juiced
Peel, core and chop the fruit, flinging it into a pan along with a swizzle of lemon juice so that it doesn’t brown. Add the honey and cook it, covered, over a medium heat for ten minutes or so, with the occasional stir, until the fruit softens and squashes when you press it using a wooden spoon. Let the mixture cool a little and then whiz it.
