Passionfruit, Honey and Lime Cooler


This is pretty what it says on the label, refreshing served neat or nice with ice and slice and a smattering of decoratively inclined mint. When I say large lime, I mean a real lime not those diddy anaemic local things. If you're using diddy anaemic local things, I'd use five or six.

Ingredients

  • 1 passionfruit
  • 1 large lime
  • 2 tsp runny honey
  • Soda

Halve the passionfruit, scoop out the seeds and flesh into a tea strainer and then whizzle them around (whizzle is so a word) until the juice has collected in the glass that you have so thoughtfully put under the strainer to stop everything ending up on the floor. Halve the lime and squeeze this into the strainer so that you’re getting every last bit of juice from the passionfruit seeds and pulp. Stir in the honey to mix well and then fill the glass with soda and, if you like, ice.
