Tomato and Onion Salad



The onion used in this recipe is a full-sized red onion, mostly imported to the UAE from the US – big, dark red and strong. Use around five of the smaller, lighter Indian variety if you like.

Ingredients

  • 5 Tomatoes, chopped
  • 1 red onion, chopped
  • 2 tsp onion seed (kalonji)
  • 1 tbsp olive oil
  • 3 tbsp lemon juice
  • ½ tsp salt
  • Pepper to taste

Put the chopped tomatoes and onion together in a bowl and then, in a small bowl, whisk the olive oil, lemon juice, salt and pepper together. In a small pan, dry fry the onion seed, giving it the occasional flick of the wrist to turn the seeds over, until they start to smoke and pop. Turn these out into the tomato and onion mixture and give it all a stir, then add the dressing. Serve.
