This is a great marinande for chicken and goes fantastically well on a BBQ. It is a bit fiddly but really worth doing.
4 stalks lemongrass, crushed and chopped
4 kaffir lime leaves, chopped
2 tsp lemon zest
3 garlic cloves chopped
3 spring onions chopped
3 tbs chopped coriander
1 tsp ground coriander powder
2 thai chillis, chopped
3 tsp brown sugar
2 tbsp fish sauce (nam pla)
2 tbsp light soy sauce
3 tbsp fresh lime juice
1 tbsp peanut oil
In the food processor whiz up the lemongrass, garlic, spring onions, lime leaves, fresh and ground coriander, brown sugar. Add the rest of the ingredients and give it a good mix.
I prefer to use chicken thighs with this recipe as they are the easiest to cook on the BBQ. However, you can of course use legs and / or breast. If you are using chicken breast lightly score the flesh to allow the marinade to seep in.
Put the marinade in a large freezer bag, add the chicken, squeeze as much air out as possible and them marinade for AT LEAST 4 hours, but preferably overnight.
