Teriyaki Sauce/Marinade

This is another great marinade for chicken for throwing on the BBQ. I prefer to use thighs as they are quite forgiven and easy to cook

125ml soy sauce
125ml mirin
2 tbs caster sugar
1 tbsp chopped garlic and fresh ginger



Bring to the boil the soy, mirin and sugar and stir until the sugar has dissolved. Remove from heat and throw in the garlic and ginger. Leave to stand until cool. Place chicken thighs in freezer bag and add marinade. Squeeze out as much air as you can and lave to marinade overnight.

Do be careful when you cook these because of the sugars in the marinade it can burn quick easily. You need to cook the thighs over a relatively low heat if possible.
