This sauce is wonderful with the tea smoked chicken.
You will need:
3 heaped tbsp peanut butter
2 tbsp mirin or sherry
1 tbsp rice wine vinegar
6 tbsp chicken stock
And then you need to:
Combine all ingredients in a pan and gently bring to the boil stirring vigorously to make sure all mixed. Cook for about 10 minutes.
Viola!

The prob is, if people like me invest in peanut butter it will be scarce by time it is time to make a satay sauce.
That's why I keep things simple.
