Red Cabbage Braised in Balsamico


This is a big favourite: spicy and sweet/sour, ideal with all sorts of roasts and other good things. Strangely enough, he of Half Beerness has also done a very similar version of this dish. Suffice it to say that we shall not stoop to baseness such as causing a public spectacle by arguing over which version is clearly superior: HMHB's Braised Red Cabbage recipe is to be found here.

Ingredients
  • ½ red cabbage (about 600g), thinly sliced
  • 1 apple, peeled, cored and diced
  • 1 lemon, juiced
  • 2 cloves garlic, chopped
  • 2 tbsp brown sugar
  • 1 red onion, thinly sliced
  • 60ml balsamico
  • ½ tsp black pepper
  • ½ tsp salt
  • 4 tbsp water


Heat the oven to GM6/200C/400F. Use the lemon juice to stop the apple browning when you’ve cut it up. Layer the cabbage, onion, garlic, sugar and apple in a casserole or a dish that you can tightly cover with foil. Sprinkle the seasoning, sugar and then the balsamico and water over the whole lot and cover it tightly. Place the dish in the middle of the oven and leave it there for a good 60 minutes, give it a stir and then return it to cook away for a further 30 mins on the low heat setting.
