A Curry Cornucopia




Alexander really knows how to pile the pressure on doesn’t he? There I was planning to post up a simple little recipe for maybe a Thai green curry, or perhaps even a fabulous northern Thai curry called Khao Soi which I love and he goes and writes up four great recipes, notes and info on Sri Lankan ingredients and even a long dissertation on Sri Lanka, its people and its food. He’s a bugger like that.

So revert to Plan B.

I come from a military family and the Boxing Day curry in the mess was a big tradition, and something that I have carried on in life. It is a fantastic way to use up left-over turkey, in fact to my mind it is the only way to use up left-over turkey.

Curry purists are going to howl at this recipe but let me tell you the British Army has marched to war on this curry and if it is good enough for them……

On Boxing Day I serve this curry along with

Dry Potato Curry
Tarka dhal
Vegetable biryani

None of which you will find in the Officers Mess but I like it anyway!
