Rabbit Marinade

Some people go all gooey about rabbits, but I'm firmly with Mr MacGregor on this one. Shoot the little bastards and then cook 'em. When it's good, rabbit is very, very good. Particularly barbecued. And yes, I know you can't get 'em in Spinneys. But one day you'll find yourself with one on your hands and you'll thank me for this...

Ingredients
  • Small bottle cider
  • 1 tsp grain mustard
  • 2 tsp honey
  • 1 tsp powdered mixed spice (or allspice)
  • 1 tsp vinegar

Boil the cider, reducing to ½ its original volume. Add the other ingredients & reheat to a boil, then leave to stand until cooled. Add pepper and salt, then pour over the quatered rabbit. Barbecue. Conspicuously leave a small blue coat near the barbecue for the kids to find.
