Mozzarella Salad

This is the simplest dish you will ever make and it is yummy. This is a Jamie Oliver recipe (can’t remember which book, sorry) and I doff my hat in his general direction. I like to serve this dish at a BBQ.

Fresh buffalo mozzarella, chopped into slices, use about 1 large ball for 2 or 3 people.
1 tub crème fraiche (approx 300ml)
1 large red chilli cut into very fine strips
1 tsp lemon zest
1 tbsp fresh lemon juice
2 tsp EV olive oil

In a shallow dish place sliced mozzarella and then carefully spread crème fraiche all over. Use a sppon to smooth the top once done.

Sprinkle the very finely shopped chilli slices and lemon zest over the top. Just before serving gently drizzle the lemon juice and olive oil over the cream.
