Mixed Bean Salad with balsamic dressing

This is such a simple salad, but one that always goes down very well.

Ingredients: (serves 4)

1 can mixed beans (pinto, black-eyed, kidney etc), drained and rinsed
10 or so cherry tomatoes cut in half
Small handful of chopped flat leaf parsley and fresh basil
50g feta cheese cut into small cubes
2 spring onions chopped fine
1 clove garlic, chopped very fine
2 red peppers, roasted, skin removed, and cut into long thin strips

Combine all of the ingredients in a bowl and then tip onto a flat dish. When ready to serve grind fresh pepper on top and spoon 3 tbsp EV olive oil and 1 tbsp balsamic vinegar over the salad. How easy is that?!
