Luxury Potato Salad

A gently spiced potato salad, ideal for those strong smoky barbecue flavours. Don't worry if you have a gas barbecue, it's still a nice salad!

Ingredients

  • 1 kg potatoes, cubed
  • 1 apple, cored and chopped
  • 1 tsp curry powder
  • 50g sultanas
  • 50g flaked almonds
  • 4 tbsp mayonnaise
  • 2 tbsp vinaigrette
  • Plenty of freshly grated black pepper.

Boil a pan of lightly salted water, and add the potatoes. Boil these over a medium heat for 12 minutes or so until just under cooked and still firm in the centre. Leave them to cool for a little while in a colander to dry out a bit. Add the apple to the potato and drizzle the vinaigrette over. Mix it all together with a light touch to avoid breaking the potato pieces. Add the other ingredients, and mix these in well. Leave in the fridge for a couple of hours for the flavours to settle before serving.
